Italian Tacos

INGREDIENTS:


DIRECTIONS:

  1. Combine the ground beef and Italian sausage in a large heavy skillet. Cook over medium heat until evenly browned. Drain off excess grease, and season meat with Italian seasoning.
  2. Heat the pasta sauce in a saucepan over medium heat until heated through. When the sauce is warm, stir in the sugar.
  3. Fill  warmed soy or whole wheat taco shells with the meat mixture, spoon pasta sauce over, and top with mozzarella cheese.

 Milk Shake

Makes:  4 servings, about 1 cup each

1-1/2 cups Soy milk /Pacific Almond beverage/Hazelnut beverage/in health food section

1 pt. (2 cups) frozen vanilla yogurt, softened

2 Tbsp.chopped almonds

 
CHOP almonds

PLACE milkand yogurt in blender container. Add chopped almonds; cover. Blend on high speed until smooth.

POUR into 4 glasses. Serve immediately.

 

 

Whipped Unpeeled Potatoes

 

INGREDIENTS:

6 potatoes (cleaned with a vegetable brush )cubed

1/2 stick (4 tbsp) soy margarine

1/2 cup soymilk or skimmed milk


DIRECTIONS:

- cook potatoes starting in cold water till just tender (20 minutes)

- Drain potatoes

- In mixing bowl add potatoes and margarine

- Start mixing and add milk to correct consistency

 

BonelessBarbecue Chicken Packets

 

INGREDIENTS:

4 boneless, skinless chicken beast halves ( 1 to 1 1/2 lb)

1 cup barbecue sauce

1 package (10 oz) frozen whole kernel corn, OR 1 can (15 1/4 oz) whole kernel corn, drained

1/2 cup chopped green bell pepper


DIRECTIONS:

1. preheat oven to 450 or grill to medium-high

2. center one chicken breast half on each sheet of Reynolds Wrap Everyday heavy aluminum foil. Spoon barbecue sauce over chicken. Top with vegetables.

3. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat tp make 4 packets.

4. Bake 18 to 22 minutes on a cookie sheet in oven of grill 12 to 15 minutes in covered grill.

5. After cooking, open end of foil packet first to allow steam to escape. Then open top of foil packet. (makes 4 servings)

 

Peanut Butter Oatmeal Snacks

Blend till creamy

1 stick  soy margarine /melted

 1/4 cup  sugar

4 oz. jar of peanut butter (1/2 cup)

2cups Old fashion Oatmeal

1/3 cup Cocoa

Shape into balls .  Roll in confectioners sugar. Place onto wax paper lined baking sheets and refrigerate 10 minutes.

When cooled, may be stored in plastic bowl.
